Broccoli Cheese Soup

Smooth, cheesy, warm and definitely tasty! This is a quick soup recipe – it’s filling plus has a couple of veggies (broccoli and onions)!

Ingredients:
12 oz. Velveeta cheese, cut into chunks
1 cup of shredded cheddar cheese
3-4 cups fresh broccoli florets (and some of the stems – diced)
1/2 sweet onion, diced
1/2 stick of butter
1 clove garlic, chopped super fine
1 cup milk
4 cups chicken broth
1/2 cup water
2 Tbsp flour

Melt butter in a large pot. Sautee onions and garlic. Add broccoli and chicken broth. Bring to a boil and cook until the broccoli gets soft. Add milk. Stir the flour in the cup of water and add to the soup. Stir until it begins to boil again. Add the cheese – stir until the cheese is melted. Serve!

This makes a bunch…enough to serve 4 with plenty left over for lunch the next day!
