Mozarella Meatloaf

My son wanted me to make “that meat stuff with that special red sauce.” He meant meatloaf. I took the traditional meatloaf recipe and added mozarella cheese and made it with salsa instead of “that special red sauce.” I got this recipe from Campbell’s Casseroles and One-Dish Favorites.

Ingredients:

1 pound of ground beef

2 cups picante sauce (I used Pace mild)

1/3 cup dried bread crumbs

1 egg, beaten

1 cup shredded mozarella cheese

Heat oven to 350 degrees F. Spray a 9″x 13″ pan with cooking spray. Mix beef, 1/2 cup of salsa, bread crumbs, and egg in a bowl. Spread the meat on a surface – smoosh it into a rectangle (about 12 inches long by 6 inches wide). Sprinkle the cheese across the beef. Roll the beef long ways. Squish the ends together (the cheese will melt out if you don’t). Place the roll in the pan and pop it in the oven for 45 minutes.  Pour the remaining salsa across the loaf and cook for another 15 minutes.

Let it stand for 5-10 minutes before slicing and serving. I spooned remaining, cooked salsa juice over the edges once plated.

Serves a family of 4…could be 5 depending on how much each person eats!
