Picadillo

I learned this recipe from one of my best friends, Roo. I’ve adapted it with whatever ingredients I have on hand and it seems to work great every time.
Picadillo

Ingredients:
1 potato, cut into chunks
1/2 onion, cut into chunks
1 bell pepper, cut into chunks
1 clove garlic, chopped fine
1 lb. Ground beef
1 cup diced tomatoes (canned)
1 cup broth (beef or chicken- your choice)
1packet taco seasoning
1 Tbsp chili powder
1 Tbsp Italian seasoning
Salt and pepper to taste
Shredded cheese
Tortillas and/or taco shells

Sauté onions, bell pepper, and garlic in a large pan for 2-3 minutes. Add ground beef and brown. Add tomatoes, taco seasoning, chili powder, Italian seasoning, salt, and pepper. Stir and heat through. Add beef broth and potatoes. Stir. Cover and simmer about 20 minutes, stirring frequently, or until potatoes are cooked. Serve with tortillas and/or taco/tostada shells refried beans. Garnish with shredded cheese and salsa.
