Red Beans (with Ham) and Rice

This is a non-spicy version of Red Beans and Rice which I usually associate with New Orleans. It’s a Crock Pot recipe – super easy!


Ingredients:

1 package of red beans

1 hamhock (or leftover ham)

1 bell pepper chopped

1/2 sweet onion, chopped

1 clove garlic, chopped fine

1 stalk celery, chopped

3 small tomatoes (or one regular size tomato)

1 tsp cumin

4 cups water

salt and pepper to taste

cooked white rice

Wash and soak red beans overnight. Rinse and put into a large Crock Pot with onions, bell pepper, celery, garlic, cumin, and 4 cups of water. Cook on low for 6-8 hours. Add the tomato and cook for another half an hour – while the rice is cooking.

Make sure you remove the bones before serving – the ham should be very tender. Spoon red beans and ham over rice. This makes enough to serve 6-8 (with some left over for lunch the next day)!
