Ritzy Chicken Strips

I don’t remember where I got this recipe. I think it’s a combination of Dijon Chicken that Sarah Mouton made and a breaded chicken recipe that a co-worker shared when I first started learning how to cook. Suffice to say that I’ve modified the recipes enough to call it my own.

Ingredients:

Chicken breasts or strips
2 sleeves of Ritz crackers, crushed
1/4 cup mayonnaise
3 Tbsp mustard
Salt and pepper to taste

Heat oven to 350 degrees F. In one shallow bowl, stir mayonnaise, mustard, salt, and pepper together. In another shallow bowl, place crushed up Ritz crackers. Coat each strip or breast in the mayonnaise mixture then place in crackers, ensuring both sides of the chicken are “breaded.” Place chicken strips/breasts on a cookie sheet. Bake for 20-25 minutes (or until chicken is thoroughly cooked).
