Yummy Yakisoba
A Japanese favorite! I love this dish – it’s really easy and filling!
Ingredients:
2 packages of fresh Yaki-soba noodles (each packages contains 3 individual servings within it…I used all 6)
1 green onion, chopped
1 clove garlic, finely chopped
1 carrot, sliced thin
1 bell pepper, cut in chunks or in slices…however you like
2 stalks celery, sliced thin
shiitake mushrooms, sliced (I used 8 caps – these were dried so i soaked them then sliced them)
oil
salt and pepper to taste
Helpful tools: chopsticks!
In a large pan or wok, sautee vegetables in 1 Tbsp of oil until they’re slightly tender but still a little crunchy. Put them in a dish and set aside. In the wok, heat 1/2 cup of water and 2 Tbsp. of oil. Add the individual packages of noodles. As they heat, they’ll start to break apart. This is where the chopsticks come in handy; use them to separate the noodles. I cooked half of the noodles (3 individual packets) and half the veggies and put them in a large serving bowl then finished cooking the other 3 individual packets and rest of the veggies. It’s a lot of noodles!
Heat the noodles for about 4 minutes. Empty the sauce packets onto the noodles and stir them up. I think it works best if you stir the sauce with about 1/4 cup of water and then add it to the noodles. Stir the noodles until they’re coated with the sauce. Then add the veggies and cook through.
Garnish with daikon (pickled radish) if you like.
Serves 6-8.
