Debbie’s Bruschetta

One of my favorite places to visit for happy hour is Lion
and the Rose. They have excellent food. One of my favorite
appetizers is Bruschetta. I tried my hand at making it and this is
the result – it’s easy and hits the spot. Try it with a nice Blue
Moon (another favorite)!

Ingredients:
French baguette
4-5 Campari tomatoes, chopped (I also remove the
seeds)
1/2 green onion, chopped
1 clove garlic, chopped
1 1/2 Tbsp fresh cilantro (or parsley…up to you), chopped
1 Tbsp olive oil
Salt and pepper to taste
Grated parmesan cheese

Heat oven to 350 degrees F. Mix tomatoes, onion, garlic, cilantro, olive oil, salt
and pepper in a bowl and set aside while you slice the bread into
1-inch thick pieces and place on a cookie sheet. In another bowl,
combine about 2-3 Tbsp. of olive oil with a dash of pepper. Brush
each piece of bread with olive oil then top each piece with tomato
mixture. Cook for about 15 minutes (or until the edges of the bread
get brown and toasty). Garnish with parmesan cheese and maybe some
Blue Moon (I’ve included a gratuitous shot of this nice beverage).
